This is a Traditional Irish Shortbread recipe that is EASY and delicious! You can use cookie cutters or bake them in a block with parchment underneath.
Preheat oven to 350 degrees.
1 Cup Butter Softened (I use salted and it was perfect!)
1 Cup granulated sugar
2 Cups all-purpose flour
1/2 teaspoon salt
1. Beat sugar and butter until fluffy. I use my KitchenAid to do this quickly.
2. Slowly add in flour and salt.
3. Turn dough out on floured surface (or if baking in blocks, use parchment paper and roll into 1/4″ thickness or use cookie cutters or a pizza roller to cut squares.) You can transfer dough on parchment and bake for easy clean up. I bake mine directly on the cookie sheet and they come off the pan beautifully!
4. Bake for 10-12 minutes, or as you like your shortbread…my mom likes it a bit browned on the edges and my husband likes them nearly underdone!
Feel free to make mini Leprechaun cookies with the left over bits…my girls loved doing this!
